Chaffle Sloppy Joes

Ingredients
  

For the Meat Sauce

  • 1 tbsp olive oil
  • 1 lb ground beef
  • 1 red bell pepper chopped
  • 1/2` medium sweet onion chopped
  • 4 tbsp tomato paste
  • 8 oz can tomato sauce
  • 1 tbsp Montreal Steak Seasoning
  • 1 tsp ground mustard
  • 1 tsp Swerve sweetener granulated
  • 2 tbsp Swerve sweetener brown
  • 3 dashes worcestershire sauce

For the Chaffles

  • 6 slices cheddar cheese very thin
  • 3 eggs beaten

Instructions
 

For the Meat Sauce

  • Heat 1 tbsp olive oil in heavy bottomed pan/cast iron skillet. Add peppers and onions and saute 5 min. Add ground beef and saute until browned and cooked through, breaking up the meat as it cooks. Make a space in the pan and add tomato paste, allowing it to caramelize for 1 min before stirring into meat. Add tomato sauce and stir. Add seasonings, Worcestershire sauce and sugars and stir. Turn heat down to low and simmer 10 min or until most of the liquids have reduced but the sauce is still loose and "sloppy."

For the Chaffles

  • Beat eggs. Place a towel under your waffle maker. Turn it on and once it is ready, place a slice of cheese on the bottom, add about 2 tbsp of egg or just over half of a whole beaten egg, top with another slice of cheese and close waffle maker. It will be ready once the steam stops or the indicator turns ready. Carefully remove the chaffle. Make a sloppy joe with the meat sauce using half of a chaffle per joe.
