Ingredients

For the Burgers

  • 1 lb salmon filet
  • 1/4 shallot minced
  • 2 cloves garlic minced
  • 1/4 cup cilantro chopped
  • 4 oz cream cheese softened
  • 1/2 cup pork rinds crushed
  • 1 whole egg
  • 1/2 lime juiced
  • 1/2 tsp kosher salt
  • 1/2` tsp black pepper

For the Toppings

  • 12 leaves butter lettuce
  • 1/2 cup chipotle mayo
  • handful grape or cherry tomatoes halved

Instructions

For the Burgers

  • Pre heat oven to 375 degrees.
Chop the salmon into small pieces or pulse in food processor. You want the salmon to still remain a little chunky but not processed smooth.
In a large bowl, combine the cream cheese, lime juice and cilantro. Mix well.
Add remaining ingredients to the bowl. We are adding some binders like egg and pork rinds to help the burgers to stay together. Gently stir together until just combined.
Form medium sized patties and place on lightly oiled sheet pan.
    Bake for 18 minutes.
Remove from oven and allow to rest for 5 minutes and serve.

Toppings/Serving Suggestions

  • There are all sorts of ways to plate and serve these fabulous salmon burgers! If you like a little spice, chop up some chipotle peppers and mix into mayo. Layer the burgers between butter lettuce leaves. Top with pico or sliced tomatoes. Add some sliced cucumbers. Serve on top of your favorite leafy greens. We served ours with a side of jalapeƱo poppers! Check out that recipe here:
