Pre heat oven to 375 degrees.
Whip together feta, garlic and parsley until well mixed and fluffy.
Put veggies on sheet pan, drizzle with tsp of olive oil, season with pinch of salt and pepper and toss well. Push veggies to sides of pan.
Add salmon filets to middle of pan and srizzle with tsp of olive oil and season with a little salt and pepper on all sides.
With skin side down, add generous spoonful of feta to tops of filets.
Place sheet pan in oven and bake for 15-25 min to desired doneness.
