Want a fabulous way to add some fat into your keto diet? Make some marinated feta!! The prep is super easy and you can customize it to your taste.
For this batch, I used the following ingredients:
2 tbsp. chopped fresh parsley, 3 sprigs fresh thyme (leaves removed), 1/2 shallot (thinly sliced), 2 cloves of garlic (thinly sliced), 1 serrano pepper (thinly sliced) 1 tbsp. lemon juice, 1 cup extra virgin olive oil, and 1 cup feta (cubed or crumbled) and three turns of freshly cracked black pepper.
Other ingredient options are rosemary, dill, scallions, or chives. Leave out the chili or onions. Experiment. Have fun. You can’t really go wrong.
Grab a mason jar and just throw all the ingredients on in. Then shake it up to mix everything together well.
Then just refrigerate it for at least 4 hours but preferably overnight. The feta gets better the longer it marinates and stays fresh for up to a week.
Serve it over our fave protein including eggs, chicken and lamb.
